Zucchini Bread

3 Eggs
1 C Cooking oil
2 1/2 C Sugar
3 t Vanilla
1/4 t Baking powder
2 C Grated raw zucchini
3 C Flour
1 t Soda
1 t Salt
1 t Cinnamon

Directions:

Combine eggs, oil, sugar & vanilla. Beat thoroughly. Add dry ingredients. Blend well. Stir in zucchini & nuts. Makes 2 loaf pans or 1 10 centimeter bunt pan. Bake @ 325 F for 60-70 minutes.
